Frogs and Enchiladas

On Friday night I made honey lime enchiladas. This is probably Josh and I's favorite recipe that we have acquired. We got the recipe from Jacob and Valerie Russell. It's a great crockpot recipe that is simple and absolutely delicious! 

Here's how they look just out of the oven.

You will need:
1 lb chicken breasts
6 T. honey
4.5 T lime juice
1/2 tsp garlic powder
1/2 tsp chili powder
1 10 oz. can green chili enchilada sauce
shredded cheese of choice
8-10 tortillas


Cook chicken in crockpot for 3-4 hours until it easily shreds with 2 forks. Spread enchilada sauce on bottom of casserole dish. In tortillas put mixture of seasonings, honey, lime, chicken and cheese. Pour left over sauce and cheese on top. Back 30 minutes at 350 degrees uncovered. 

My tips: If you like lots of sauce, use 2 cans of enchilada sauce. If you like more kick, use medium sauce, if not, use mild. We like to toy around with how much lime and honey we use, so be creative! 

Now..onto the frog.

Last night we had a full house. We watched the movie, The Secret, with all the people who here selling. Interesting video, also a book. Interested? Go look.

Anyways, as everyone was leaving and Josh was cleaning up the kitchen, he found this hopping around on the counter...


It's a little tree frog! Isn't he cute!?
The best part about this frog?
He made Josh scream!

Josh saw him on the counter and called me over but wasn't expecting him to jump anywhere but he took the leap from the counter across the kitchen to the floor. Jenn and I both held him before we took him outside.


He made himself very comfortable.
It was a fun weekend :)
